The short version
Analytics here is cookieless until you accept. If you decline, nothing is stored on your device beyond your choice, and nothing is shared with advertising platforms. No personal data is sold, ever.
What is collected, and when

Actions that get recorded
Page views, clicks on calls to action, moves between these sites, newsletter signups, and — on the store — product views, add-to-cart, checkout and purchase. Nothing else.
Cookies
Your consent choice is stored for 180 days so you are not asked on every page. If you accept, Google Analytics and PostHog each set an identifier so repeat visits can be recognised. Clearing your browser storage removes all of it and you will be asked again.
Sharing
Data goes to the processors named above and nowhere else. If you accepted, conversion events are also sent to Meta for advertising measurement, with any email address hashed before it is sent. If you declined, that does not happen.

- Unsubscribe from any newsletter email to be removed from the list.
